Many of the recipes in this cookbook are really good. A few are even great. There are some which are just bland, or have really strange combinations of food that don't blend well. But I reason I didn't give it more stars is more because of how many recipes call for canned beans. We are supposed to be eating less processed foods. Why not tell people how to cook a batch of beans to use for the week. It's SO SIMPLE and crazy that a process product is suggested - some recipes don't even show an alternate (like the Taco Salad).
In my home, we are finding other “vegan” recipes (in books and online) and altering them to match our Whole-Food-Plant-Based meal plan.
